Here are some highlights from my day:
I got my Bondi Band in the mail today! Callie at Athlete Wannabe is raising money for her aunt who has cancer. If you donate 10 dollars, you get a bondi band. I have been wanting one, and thought it was a great cause, so I went for it. I love my pink one.
I made Stephen's breakfast bars. These have dates, dried cranberries, oats, peanuts, and dark chocolate chips. I adore my Vita-Mix. So much!
I have been wanting to make a pie. But there is a problem. I am not a big pie fan. When it comes to desserts, pie is always my last choice. Cake or pie? Cake. Cookie or pie? Cookie! But what if you gave me a cookie pie? Well then, I am sold!
I decided to make a chocolate chip cookie pie, inspired by Bakerella's amazing dessert.
I made my own pie crust using this recipe from Simply Recipes.
Confession: I do not own a pie pan. Want to buy me one? I used a cake pan instead. It worked.
I added some cinnamon to the top of the cookie dough filling. It looks so promising!
All baked up. This made our apartment smell AMAZING.
It even sliced up nicely. My goodness.
This is going to be a go-to dessert for me. Especially when I need something comforting.
I served the slices with a small scoop of vanilla-lemon frozen yogurt that I made this afternoon.
My frozen yogurt was super easy to make! I bought a 32 oz container of Stonyfield vanilla yogurt. I stred in lemon zest and juice from one lemon. Then I frozen it in my ice cream maker.
It came out so so good! It's just silly, though, because it is completely healthy. Yet it is so delicious. Next time I need to make a peanut butter frozen yogurt.
I had no idea what make for dinner tonight so I asked Stephen and he said to use the sausage we bought. Hmmm...not the biggest help. But I went with it and also cooked up some plantains.
I got very green plantains today, so I made tostones.
I made meatball sandwiches with a homemade tomato sauce. I topped mine with spinach.
The meal (Stephen's plate). It was a good dinner. I love cooking, so I always miss it when I go on vacation. It is funny, because I actually eat less dessert on vacation, because it usually isn't as good as what I make myself. That sounds a little pompous, but it is true! I love good homemade dessert. One day I will live in a place with awesome bakeries. But I will probably save money and my own sanity by makng my own.
I also got a letter from Singapore today! So excited to read it! Hope you had a fantastic Tuesday!

damn, that pie is I.N.S.A.N.E !! this wouldnt last 5 min. in my house, it would be me and my mom going back in for "just one more slice" haha <3
Aww that pie looks gorgeous! I hope you had some for yourself. I dont like plantains, but I love tostones! weird how you like ingredietns when they take different forms
