Mmmmm Cookies!

How have you been this weekend? I have kept up with my painting, cooking, and dessert making. I have also been writing some food articles. I got a little gig with My Kitchen Vault a site online where you can look up n ingredient and find a review nd some recipes to go along with it. Here are some of my articles. More will be added soon.

Yesterday's painting of the day. It has a nice calming vibe to it for me. It makes me feel like the flower is trying to grow but is having a lot of trouble letting go of things. The flower is having issues moving forward, so her petals are growing downwards, and she is crying. But she is still in the sunshine. She still faces each day with optimism! Maybe one day she will be brave enough to show her petals completely and let go and the things holding her back?

My Awe-Manac told me that today is a day to appreciate music. I started this painting with a nice blueish purplee background and them found myself drawing dots and lines. Eventually I found my hand drawing musical notes. I have no idea that the circles were like records and the lines like scales! This is my favorite thing about creating art. It comes out of me without even me knowing what is happening. Kind of like a trance. But definitely a great trance!

Yesterday we were nearly out of groceries! So what did I do? I made a half batch of pizza dough and made us individual pizzas!

Stephen's pizza got all the cheese that was left. It has cheese, bbq sauce, chicken, and bacon.

My pizza. Bbq sauce, chicken, and kale. The dough came out amazingly! Definitely a great dinner for something just thrown together with minimal ingredients.

I have decided to tackle BURGER WEEK after all. Each night that I cook this week, I will make some type of burger. The same bread type cannot be used twice. That is the only rule.

Today I attempted to make my own wheat pita bread. I won't post the recipe, because it turned into flat bread. It is pretty amazing flatbread, but I wanted pita bread! It is okay, I used the flatbread for my turkey burgers.

The turkey patties had garlic, cilantro, salsa, and salt and pepper. The patties were topped with mozzarella cheese, tomatoes, lettuce, and a sauce made from greek yogurt and salsa. I made some tostones to go with the burgers. It was delicious and enjoyed while watching the beginning of the Tony's. Anyone else obsessed with theater? This show is making me so super happy!!

And now for something really awesome!

AMAZING Chocolate chip cookies

These cookies are a combination of Emily's awesome cookies and Brown Eyed Baker's great cookies. My own combination of their ideas. I used some yeast, browned all the butter, used only brown sugar, and used an egg and an egg yolk.

1 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1 tsp sea salt
1/2 tsp dry active yeast
Mix together until well combined

1 stick unsalted butter browned
1 cup brown sugar packed
1 egg and 1 egg yolk
1 tsp dark rum (go ahead and use vanilla extract if you want!)

Mix together until well combined
Combine the dry and wet ingredients and mix in:
1 cup dark chocolate chips
Refridgerate dough for 1 hour to overnight

Preheat oven to 325 F. Place 1/4 cup balls of cookie dough on the baking sheets. Bake for 15 minutes. Allow to cool on the baking sheets.

They look like this! Very bakery ready and incredible. When you take one for dessert, you tell yourself that you won't eat the whole thing. But once you take a bite, you cannot deny yourself the entire cookie. It is that great. Truly amazing!

Seriously.

  2. Cilantro sounds like a great addition to turkey burgers. They are one of my favorites, but I'm always on the look out for new ways to spice them up. Thanks for sharing!
