How was your Saturday? I started mine with a 50 minute bike ride, a lovely breakfast, and then 3 hours of proposal editing. I will play with my proposal again tomorrow. Seriously, I think my soul dies each time I work on it. But I should finish. I know that I will be so proud of myself when I finish! Notice I said "when" and not "if".
Stephen and I went to the Fox and Hound, a bar near our apartment, where I discovered a new beer, and loved it! Fullers ESB. It might be my new favorite beer. I seldom order the same beer twice in one night, but I had two.
Food highlights:
I made blended oatmeal again this morning. I really enjoy the texture of this breakfast. It's like eating a very thick smoothie.
Blended Oats
1/3 cup rolled oats
3/4 banana (I ate the rest of it before my workout)
1/3 cup chocolate almond milk
2 tbsp wheat bran
1 tbsp homemade almond butter
1 tsp maca
I blended it all in my Vita-mi. I then poured it into a small glass and scooped some greek yogurt on top.
Lunch: Tomato blue cheese omelet on a wheat sandwich thin. Kale salad on the side.
The omelet sandwich was great. I put some hot sauce in the omelet, too, to give some excellent flavor.
Dinner was quesadillas with buffalo chicen sausage, blue cheese, cheddar cheese, and bacon.
I adore the flavor combo of buffalo sauce and blue cheese. Actually blue cheese just makes me happy. Cheese in general makes me happy, especially the super flavorful ones.
For dessert, I was craving chocolate. So I made brownies.
Dark chocolate coconut rum brownies
1/4 cup dark chocolate chips
1/3 cup special dark cocoa powder
1/2 cup brown sugar
1/2 cup unsalted butter
melt in the microwave for about 1 minutes. Stir together.
Add in:
1 egg
1 1/2 tsp dark rum
Mix together
Add:
1/4 cup flour
1/4 cup coconut
Bake at 350 F in a loaf pan for 18 minutes. Place in the freezer for about 20 minutes and remove from pan. Cut into pieces. Yields about 10-12 small brownies.
These brownies are in between cakey and fudgy and are rich. You can feel a light flavor of coconut and rum, but the dark chocolate is very dominant.

ReplyDeleteThanks so much for your lovely message of strength and encouragement. You're right, I think I ought to start trying to focus on each day as they come. I realise that I tend to start thinking too much about the future, so much so that I get myself all worked up. The questions you posed to me are ones I definitely need to think about because sometimes, I feel as though I'm not worth it, even though I know how untrue that is. I will keep my head up and keep fighting though, and it's thanks to wonderful people like you who remind me that I have so much more to live for!
